La torta light is a delicious preparation of homemade pastry, with a delicious flavor and from reduced fat content it is perfect to be served on special occasions. The light cake was created on the occasion of the Mother's Day, its simplicity and its genuineness are in fact the characteristic features of our mothers.

La preparation of the light cake it's really very simple: you don't need any special equipment or even pastry knowledge, all you will need will be a whisk, or alternatively an electric mixer, and a mold for cakes measuring twenty centimeters in diameter.
This dessert shows up soft and very tasty and the absence of sugar among its ingredients goes unnoticed. The sweetness in the base of the light cake is in fact given by almond milk, during cooking this almost completely loses its typical flavor, leaving however a very delicate aroma that goes perfectly with the strawberry jam-based filling. The refined flours then give way to spelled flour, which makes this sweet slightly amber and terribly appetizing.
The preparation times of the light cake are not long and moreover, if stored in special airtight containers, this cake will keep its fragrance and texture for a couple of days.



Ingredients

  • 3 eggs (146 gr shelled)
  • 250 grams of spelled flour
  • 150 grams of almond milk
  • 10 gr of baking powder
  • 20 gr of shelled almonds
  • 330 gr of strawberry jam with no added sugar
  • oil and flour to taste for the mold

Procedure for the light cake:

 

  • Oil and flour the cake mold.
  • Shell the eggs and put them in a large bowl and whip them until they become frothy
  • Add then the milk and mix everything.
  • To incorporate now the flour and baking powder and continue to work the mixture until it comes down from the whisk without breaking.
  • To pour then put the mixture in the pan and bake in a preheated oven at 180 degrees for about twenty-five minutes.
  • Cooking when finished, remove from the oven immediately, remove the cake from the mold and let it cool on a wire rack.
  • When the base has cooled down, cut it into two discs with a large, smooth-bladed knife.
  • Leek the lower disc on the tray that will be used to serve the cake and fill it with the jam, then close with the other disc simply overlapping the first.
  • Spread more jam on the surface, then roughly cut the almonds and sprinkle them on the cake.
The light cake will then be ready to be served.
