Everything grown in these special gardens is served on the menu. The founders of this US restaurant chain have always been interested in on-site cultivation. But their restaurants are located in very urbanized areas. Therefore, there was no place for a traditional vegetable garden.
Hence the idea of inserting vertical gardens directly inside the restaurant and towards the outside, near the tables where guests can sit to enjoy a menu prepared with truly a zero kilometers.
The restaurant chain turned to vertical gardens made by Green City Farms to start indoor growing. This is the ideal solution because you don't need a lot of available space and because the water requirement is minimal.
Each column of the vertical garden can accommodate 44 plants and in the Hollywood restaurant alone there are no less than 24 columns that offer the restaurant chefs always fresh small fruits and vegetables as well as aromatic herbs.
A good example to follow to identify new cultivation methods and eco-sustainable food production even in an urban environment. Of course, with these vertical gardens for Hollywood restaurateurs it is not possible to grow all the food to serve to guests, but they have set themselves the goal of reaching at least 60% of the supply thanks to hydroponic and aeroponic agriculture.
