Tomato paste is a versatile ingredient that can be used to add flavor to different recipes. Here's how to do it at home.

A versatile ingredient, to be used to enrich different recipes with taste and flavor, from soups to meat sauce, to vegetable minestrone, but also simply to enhance the flavor of simple first courses, such as pasta alla puttanesca or all'arrabbiata. 

Easily available on supermarket shelves, tomato paste is available in simple and practical tubes to use, but it is better to make it at home since a out of two products is contaminated with pesticides or mold toxins.

Homemade tomato paste: the recipe

The tomato paste recipe is really very simple; for 250ml of homemade concentrate here's what you need. (Read also: Tomatoes: which ones and how to choose them)


ingredients:

  • 1 kg of ripe tomatoes, preferably in season 
  • 5-8 grams of salt (depending on taste)
  • optional: pepper, chilli, garlic, oregano

Procedure:

  • Wash the tomatoes and make a cross on the bottom, to make peeling easier.
  • Arrange the tomatoes in a saucepan with boiling water and blanch them for a short time. Then take them out of the water, rinse them in cold water and start peeling off the skin.
  • Now divide them into quarters, remove the stalk and core. If you want the pulp to be particularly fine, you can also pass the tomato pieces.
  • Return the pureed pieces to a saucepan, add the salt and other spices and bring to a boil. After about 20-30 minutes the mass thickens.
  • Hang a colander over a saucepan or bowl and place a tea towel in the colander. Pour the tomato mixture into the cloth and place it in the fridge overnight.
  • The next day you can drink the leaked liquid into the bowl or pot like tomato juice. Pour the remaining tomato paste into the cloth into clean glasses.
  • Keep your homemade tomato paste in the refrigerator, it will keep for several weeks and you can use it to enrich your pasta sauces but also various main courses.
