Uno light snack, dietary e Howdy to break the mid-morning hunger? How about one dried fruit bar homemade? Simple and quick to prepare, the bars that I propose are good, but above all free of thickeners and preservatives like those purchased packaged.
Ingredients for about 8-10 bars:
- a cup of coconut flour
- a cup of almonds
- a cup of raisins
- the juice and peel of one lemon
- 2 tablespoons of fruit juice (of the type and flavor you prefer)
Put the almonds and raisins in the mixer and blend everything until you get a fine grain, pour the mixture into a bowl, add the coconut flour, the juice and grated zest of a lemon, the fruit juice and mix with your hands until you get a soft and slightly moist mixture: pour everything into an oiled pan dusted with coconut flour, press well with your hands until you get a hard and well-compacted layer and put in the freezer for about 2 hours.
After this time, cut the resulting layer into many single-portion rectangles and serve! Keep the bars in a tightly closed container in the refrigerator.
