Oat flakes biscuits

Here is a prescription to prepare very simple and really tasty biscuits at home, as well as customizable. We explain how to prepare at home i oatmeal cookies, good for breakfast and for a snack.
- 250 grams of whole wheat flour
- 150 gr of wholemeal oat flakes
- 120 ml of water
- 100 gr of dark chocolate chips
- 80 gr of whole cane sugar
- 60 ml of extra virgin olive oil
- 50 gr of shelled almonds
- 1 sachet of organic baking powder
- 1 teaspoon of organic vanilla powder

With the indicated ingredients you will get about 40 oatmeal biscuits. The preparation of these cookies is very simple. If you don't have the chocolate chips available, you can chop some dark chocolate from a bar or replace them with an equal amount of raisins. In this case you will have to soften the raisins in a cup of water for 30 minutes, drain, dry and flour it before starting to knead.
To start preparing the oatmeal cookies finely chop the almonds until you get a coarse flour. You can also chop a part of the almonds with the knife to get more crunchy cookies.
In a large bowl pour in the flour and the chopped almonds and mix. Add the whole cane sugar, i oat flakes, dark chocolate chips, vanilla powder and baking powder. Mix all the ingredients well with the spoon.
Now that you have all the dry ingredients together, you can start adding the liquid ingredients. Gradually pour in the water and extra virgin olive oil and start kneading everything with your hands. If the dough seems a bit sticky, you can add one or two more tablespoons of wholemeal flour to facilitate processing. It will be easier if you knead with floured hands.
Knead vigorously until the mixture is very compact as in the classic preparation of biscuits. Give the dough a spherical shape and leave it rest in the refrigerator in a bowl for 30 minutes.
At this point you can divide the dough into two or three equal parts and roll them out one at a time with a rolling pin on a floured surface. Maintain a thickness of about half a centimeter. Cut out the cookies with a round mold and place them on trays covered with parchment paper.
Bake the oatmeal cookies in a preheated oven at 180 ° C for 15 minutes. When it is time to take them out of the oven, the cookies must still be a little soft as they will dry out as they cool. You can keep them in a paper bag or tin box even for the whole week… but you will certainly finish them much sooner!
