You will need to have dried fruit, seeds and cereal flakes available. As a special ingredient for the preparation of these energy bars we have chosen goji berries, the fruit of life and longevity.

Ingredients

50 gr of shelled almonds
50 gr of shelled hazelnuts
50 gr of rolled oats
40 grams of pumpkin or sunflower seeds
40 gr of goji berries
30 gr of raisins
2 tablespoons of coconut flour (optional)
2 teaspoons of extra virgin olive oil
200 grams of agave syrup or corn malt

Preparation

With the listed ingredients you will get about 16 goji berry energy bars. For the preparation of this recipe you will need a rectangular pyrex glass or ceramic pan (lasagna pans are fine), a spatula, a bowl for soaking goji berries and raisins, spoons and a food processor or kitchen mixer. You can substitute agave syrup or corn malt with fairly liquid honey if you like.

You can find goji berries for sale in herbalist's shops, on the internet, in organic food stores and in some supermarkets, as well as agave syrup and corn malt. All the other ingredients are available in common grocery stores.

First let the raisins and goji berries soften in a bowl or bowl filled with water at room temperature for at least 30 minutes. This trick will ensure that the two ingredients do not risk drying out too much when cooked in the oven.

Chop in mix theand almonds, hazelnuts and oat flakes in order to obtain a coarse flour. Pour into a large bowl. Chop the pumpkin or sunflower seeds. You can also leave some whole if you like. Add the coconut flour to the mixture and pour everything into a single bowl.



Mix the ingredients with a spoon so that they are well distributed. Drain the raisins and goji berries and pat dry with a clean cloth. Add them to the other ingredients and pour the chosen sweetener into the same bowl. Mix well with a spoon until you get a homogeneous and rather sticky mixture.

Pour two teaspoons of extra virgin olive oil and grease it well on the sides as well. Then arrange the mixture with the help of a spoon and a spatula. Squeeze well to compact and level it. Try to get one layer about 1 centimeter thick. Bake everything in the oven at 180 ° for 10-15 minutes, making sure that the surface does not darken too much.

Remove the pan and let it cool. Then with the help of a knife cut rectangular bars. Let it cool completely and take out your bars with the utmost delicacy. You will be able to refrigerate for 3 to 4 days in a food container. To better separate them from each other, use a few pieces of baking paper.

To get one fresher and softer snack, avoid cooking in the oven and let the pan rest in the refrigerator for a few hours.
