You can serve these biscuits as a snack or breakfast, perhaps accompanying them with a hot drink, or you can use them to prepare the bases of typical cakes cheesecake, crumble them for a crumble or offer them as a combination with hot chocolate, or as a substitute for waffles to garnish ice cream sundaes.

Homemade dry biscuits: preparation

With the indicated ingredients you will get about 20 cookies, depending on the size of the stencils you will use. If you don't have wholemeal spelled flour available, or you can't find it easily, you can use wholemeal wheat flour. Try to choose wholemeal and organic ingredients for your recipes as much as possible.



The recipe calls for the use of agave syrup (or rice malt or another similar natural sweetener, always liquid) in order to give the right consistency to the dough. You can easily find agave syrup in the supermarket and rice syrup in organic and natural food stores.

To start preparing your dry biscuits, take a large bowl. Weigh and pour the flour. Gradually add theextra virgin olive oil and agave syrup (or rice malt). Also join a teaspoon of baking soda, a pinch of salt and half a teaspoon of organic vanilla powder (not the industrial vanillin, but the real powdered vanilla bean that is sold in jars).

Mix with your hands by adding a spoonful of cold water. You will need to get a very compact dough, with a consistency similar to shortcrust pastry, but which will be a little more difficult to work with because of the wholemeal flour. Give the dough a spherical shape, grease with a drizzle of oil and let it rest in the refrigerator for 45 minutes.


Then roll out the dough, after respecting the resting times, forming a layer with a thickness of about 3 millimeters. Cut out your cookies with round molds and arrange them in a baking tray lined with baking paper. Prick them in the center with a toothpick.

Bake your own homemade dry biscuits in oven preheated to 180 ° C for 10 minutes. When it is time to take them out of the oven, the cookies should be golden but still slightly soft. They will dry out as they cool. You can store in a tin or large glass jar for one week. Good preparation!
