Two ingredients are enough to prepare cherries in alcohol which in this way, as the grandmothers teach, retain all their nutritional properties. To make this traditional preserve perfectly, in fact, it will be necessary to prepare a syrup of water and sugar, which, once cold, must be poured into the jar full of clean and dry cherries and then add the alcohol to cover everything; to flavor them it is also possible to insert spices such as cinnamon or cloves inside the jar.

Valid, tasty and even faster alternative are the cherries in grappa, where it will be sufficient to simply insert cherries, cane sugar and grappa in the jar; also in this case it is possible to add aromas such as lemon scraps or cloves. As an alternative to grappa, always following this procedure, it is also possible to use whiskey, brandy, gin and vodka, the important thing is not to use liqueurs with lower grades.

To prepare cherries in alcohol, it is advisable to choose very firm and local fruit (no matter the variety), as long as it is not too ripe or treated. This will be suitably washed with water and bicarbonate and placed in previously sanitized jars with hermetic closure.

How to prepare cherries in alcohol: procedure


  • Sanitize the jar and put the water and sugar in a saucepan, melt the sugar over medium heat, then turn off and let it cool.
  • To put the cherries soaked in water and bicarbonate, rinse and dry them,
  • cut then the petiole reducing it to a size of half a centimeter e
  • iniziare insert the cherries in the sanitized jar, pour the syrup and then cover with alcohol; for cherries under grappa instead insert the fruit by layering it with sugar and cover completely with grappa,
  • prima to close the jar it is possible to insert any aromas;
  • to close then the jar hermetically and store in the pantry in the dark for three months before reopening it.
