Today we present the recipe of homemade bagels naturally leavened, prepared with sourdough.
150 gr of refreshed sourdough
500 grams of spelled flour
250 ml of water
1 teaspoon of rice malt or brown sugar
1 pinch of fine salt
Pumpkin, sunflower, cumin, poppy, sesame seeds ...
In a large bowl pour the mother pasta gradually adding water and flour. Also add a pinch of fine salt and a tablespoon of natural sweetener, such as rice malt or brown sugar.
Knead by hand, for a long time and with energy as for preparing bread. If necessary, while kneading, add a little more water or flour to make the dough easy to work and not sticky. Place the dough in a bowl, cover with a linen or cotton kitchen towel and let rise for about 6-8 hours, until the dough is doubled.
After rising, divide the dough into 10 equal parts. Form 10 regular-shaped balls by rolling the dough on a cutting board or pastry board. Press each ball lightly and pierce it in the center with your fingers to form a ring.
Arrange each ring on a baking sheet lined with parchment paper, cover with a cloth and let it rest for 30 minutes. In the meantime, bring a saucepan with 1 liter of water to a boil (you can salt it lightly as for pasta).
With a skimmer soak each bagel for 1 minute in boiling water and put it back on the baking sheet covered with baking paper. Immediately decorate the bagels with the selected seeds while the surface is still damp. You can choose between poppy, sesame, pumpkin, sunflower seeds, of cumin ... according to your tastes.

Bake your own homemade bagels in a preheated oven at 180 ° C for about 25-30 minutes until golden brown. Let it cool before tasting. You can enjoy the bagels as they are or slice them in two parts like sandwiches and stuff them as you like.
Those who do not have the sourdough available can alternatively use a cube of brewer's yeast fresh: crumble it in a little warm water before adding it to the other ingredients and follow the same procedure, bearing in mind that the leavening will be shorter (2 or 3 hours until the dough is doubled).
