    Ingredients for a loaf for about 5 people:

    • 600 g of flour 0 or 1
    • 300 g of warm water
    • a handful of well washed and squeezed raw spinach
    • brewer's yeast (in cube, or 4 g of freeze-dried one)
    • 3 tablespoons of olive oil
    • a teaspoon of honey
    • 3 pinches of salt

    First, put the handful of clean spinach and half of the water indicated (therefore 150 g) in a tall and narrow container (for example the smoothie glass) and blend everything until the mixture is green and homogeneous.

    Then pour it into a bowl, add the sifted flour, the yeast dissolved in the remaining water, the honey and knead everything for a few minutes. When the green of the spinach is well distributed throughout the dough, cover the bowl with plastic wrap and let it rise for about 3 hours.

    After this time, preheat the oven to 200 ° C, then resume the dough, add the oil, salt and knead until the ingredients are well distributed.

    At this point, cover a baking tray with baking paper, sprinkle it with flour and put the dough on top, giving it the shape you prefer; sprinkle the surface with flour and bake for 15 minutes; then lower the temperature to 180 ° C and cook for another 40 minutes.
    When the loaf has become golden brown, take it out of the oven and let it cool.
