    You will need:
    - a beautiful ripe and very large peach
    biological. In reality, you can make your jellies with any type of fruit, preferably in season.

    - 100 grams of sugar(plus a little more for coverage)

    - 4 tablespoons of lemon juice

    - 6 isinglass sheets (about 12 grams)
    - molds for silicone ice

    Making these candies is super easy. First of all you have to soak the sheets of glue in plenty of lukewarm water of fish.

    Meantime wash, peel and blend the peach (remember that it must be large and mature), then add 100 grams of sugar, 4 tablespoons of lemon juice and put everything in a saucepan medium sized.

    Boil over low heat for a few minutes, taking care to stir the mixture continuously, then remove it from the heat and let it rest for a couple of minutes.

    At this point add the six isinglass leaves previously soaked in warm water; mix everything and keep turning for a few minutes, until all the glue has dissolved completely, thus becoming a liquid and homogeneous mixture. If not, heat the mixture again and stir until all the solid fragments that remain are completely dissolved.

    Then pour the liquid that you have prepared in the special silicone molds for ice (they are also found in supermarkets, in the sector dedicated to trays and molds for sweets).
    Let in the fridge for a whole day and your jelly candies will be ready!
    To get them out of the mold just exert a little pressure on the bottom (do not force too much, however, otherwise they risk breaking).

    Finally you can sprinkle them with granulated sugar to make them more inviting and greedy; the important thing is to distribute it evenly. To make this easier, you can put them in a large jar with some sugar, shake them and turn them over until all the jellies are coated with white.



    The candies prepared in this way, thanks to the presence of lemon and sugar, can be safely stored in the fridge for several days.

    Remember!
    In general, we must bear in mind that for every 100 ml of compound of fruit and lemon it takes approximately two sheets of isinglass and that, of course, the peach can be replaced by any other fruit.
