Chickpea flour is a very versatile ingredient, which you can use for the preparation of numerous savory recipes.   • 15 g of yeast

Procedure for the chickpea focaccia:

  • Crumble the brewer's yeast and pour it into half a glass of warm water. Mix well so that it can dissolve.
  • In a large bowl pour the wholemeal flour and chickpea flour. Mix well with a wooden spoon to mix.
  • Pour two tablespoons of extra virgin olive oil, a pinch of salt and a teaspoon of semi di papavero. Stir again with the wooden spoon before starting to knead. At this point you can add the yeast dissolved in water and other warm water little by little.
  • Work the ingredients vigorously with your hands, until you get a homogeneous and elastic dough.
  • Form the classic ball and place it in the bowl. Cover with a dry kitchen towel.
  • Let rise at room temperature for about two hours, until the volume of the dough has doubled.
  • Sprinkle some oil on the bottom of a round pizza pan. When the dough is ready, roll it out with your fingers from the center towards the edges.
  • Preheat the oven at 180 ° C and garnish the focaccia with the sliced ​​onion, chopped rosemary and a drizzle of oil before putting it in the oven. Cook for 25-30 minutes, until golden brown.



Advice

I recommend serving this chickpea flour focaccia as appetizer, after having cut it into wedges. You can accompany it with asalad get ready with red cabbage cut into strips, pine nuts and chopped walnuts. Add one or two tablespoons of raisins previously softened in water and season with extra virgin olive oil, orange juice and a pinch of salt.
