Preparation:

Pour about 50 g of flax flour into a saucepan. Add water until you get a creamy and not excessively liquid pack and bring to a boil. When the solution starts to boil, turn off and remove from heat. Pour the compress thus obtained into a cotton or linen handkerchief well laid out on which you have previously applied a piece of paper such as scottex.

Fold the edges of the piece of paper and handkerchief back. Let it cool according to your degree of tolerance and apply on the part to be treated.

For coughs, the poultice should be placed still warm in contact with the chest, while for sinusitis it rests on the forehead or cheekbones. In case of cystitis, if applied directly to the bladder, the compress relieves the burning and that annoying sensation of having to urinate continuously.

The use of this flour is especially recommended for cookies and its texture goes very well with wholemeal flour pancakes and muffins.

Excellent pairing with dried fruit, such as almonds, nights e hazelnuts, but also with other oil seeds including sesame, poppy and sunflower seeds.

Its aroma vaguely similar to that of hazelnut is however perceptible in the final preparation. Therefore, if we want to make desserts with a particularly delicate flavor, we can reduce the amount of flour used.

This flour can be used in combination with other unrefined flours in the preparation of savory doughs, such as bread, bread sticks and crackers. It is sufficient to mix a quantity of flax flour equal to about 20-30% of the total flour used (integral, aven o kamut).

Muffins with flaxseed flour and blueberries

ingredients:

1 cup of whole wheat flour

¼ cup of flaxseed flour

1 teaspoon 2 half of baking soda

½ teaspoon of cinnamon powder

¼ teaspoon of salt

1 tablespoon of apple cider vinegar

¼ cup of vegetable oil

½ cup of maple syrup

1 teaspoon of vanilla powder

2 tsp of orange zest

1 1/3 cup blueberries

Preparation:
Preheat the oven to 190 degrees for 15 minutes. Oil some paper cups so the muffins don't stick.

In a bowl, mix the almond milk and apple cider vinegar and set aside. In another larger bowl, mix the flour, baking soda, cinnamon and salt. Add the maple syrup, vegetable oil, vanilla and orange zest to the milk and vinegar mixture. Mix the ingredients well with a plastic spatula, then add the blueberries as well.

Portion the batter obtained into the previously prepared cups, pouring approximately 3 tablespoons into each container. Bake the muffins for about 15-20 minutes or until they are golden brown.

Bread with flaxseed flour

ingredients:

300 g of whole wheat flour

100 g of flaxseed flour

1 teaspoon of whole sea salt

2 tablespoons of flaxseed or mixed seeds or chopped walnuts

25 g of fresh brewer's yeast

270 - 300 ml of warm water

Preparation:

Heat the oven to 50 degrees for a few minutes and prepare a kitchen towel clean, wet and wrung out. In a large bowl, mix the flours and seeds. Add the salt and mix well.

Dissolve the yeast in a container with 250 ml of warm water. Let it rest for a few minutes. Then stir it with a teaspoon and mix well.

At this point, pour the water and yeast solution into the bowl and start kneading. Flaxseed flour tends to stick, but you have to work it until you get the consistency of a smooth and homogeneous dough, possibly elastic and not sticky. Add more water while kneading the dough.

Once you have the right consistency, remove the dough from the bowl and shape it into a ball. Then flour it and put it back in the bowl. Cover with a cloth and leave to rest in the oven for about 2 hours.

Then pick up the dough, kneading it on a surface until it has a rectangular shape so that it can be contained in a loaf pan lined with baking paper. Let it rise for another 4 hours. Bake for approx 30 minutes at 200 degrees.
