The beauty of frushi, or more simply fruit sushi, is that it can be made with any type of fruit, at any time of the year and you can serve it on any occasion: for a quick and tasty lunch, a alternative dinner, a cool aperitif or a light snack between a business appointment and a phone call.

Abroad it is also used a breakfast. Some of you will be horrified at the thought of eating rice as soon as you wake up, but if you think about it this food is neither sweet nor salty, it has a neutral, delicate taste and goes well with any type of food.

So why not try?

The ingredients

To realize five portions of frushi (each serving includes 4 pieces and about two and a half tablespoons of yogurt) you will need:

- a cup and a quarter of water

- a cup of uncooked sushi rice (or another type of small grain rice)

- a quarter cup of sugar

- a cooking spray (it comes in the form of a no gas canister. It is used to prevent food from sticking to containers and you can also find it in supermarkets, in the department dedicated to sweets, next to vanilla, chocolate chips and sugar sprinkles for the decorations)

- a quarter cup of coconut milk

- a pinch of salt

- 10 orange wedges

- 20 fresh raspberries

- 200 grams of low-fat vanilla yogurt

The preparation

Put the water in a medium-sized pot and bring it to a boil; pour in the rice, cover with the lid, reduce the heat to just over the minimum and let it cook for about fifteen minutes (or until the rice has absorbed all the water in the pot).

At this point remove the pot from the heat and, always leaving the lid on, let it rest for about fifteen minutes.

Then put the rice in a large bowl, add lo XNUMX/XNUMX cup sugar, coconut milk and sale, gently stirring the mixture.

Cover and let it rest for another twenty minutes or so.

After this time, sprinkle some non-stick liquid (cooking spray) on your hands e divide the rice in twenty equal portions forming balls (about one tablespoon for each serving).

At this point, with the palms of your hands, gently press each rice ball and make ovals.

Garnish ten with an orange wedge each, pressing gently on the surface to make the fruit adhere well; on each of the remaining ten instead put two raspberries.

Always remember that if the fruit slice does not adhere to the rice stick you can use a small amount of honey!

Once this is done, take a wide plate, lined the surface with baking paper e gently lay down the twenty portions.

How to serve it ...

Now the your frushi is ready! Cover it with a cloth e leave it in the fridge until ready to serve.

Always remember to accompany your frushi with a bowl of yogurt which will serve as a condiment (which replaces the classic soy sauce in which normal sushi sinks).

Now all that remains is to wish you as always… Bon appetit!
