According to an inter-ministerial decree (Ministry of Productive Activities and Ministry of Agriculture and Forestry Policies), in fact, the "Colomba" is a confectionery product with very precise characteristics: soft paste, obtained by natural fermentation from sourdough, with an irregular shape similar to a dove, with a soft structure with elongated alveolation, with superior glazing and a decoration composed of sugar grains and at least 2% almonds (considering the finished product).

If you buy directly in bakeries and artisan workshops know that the individual products may not have the label but on the sales counter there must be a sign indicating the list of ingredients and other specifications of what you buy.
