Here is the simple and healthy recipe to make coffee cremolato at home (also known as grandfather's cup or cremina)
When you go to the bar you can't resist coffee cremolato, that iced mousse that constantly turns in plain sight in the slush machines? But have you ever wondered what's inside?
Often (but not always), added vegetable oils, thickeners of various origins, artificial dyes and emulsifiers are used to make ice creams such as those commonly sold in bars, which certainly do not go along with health!
So here's one simple and healthy recipe per make coffee cremolato at home (Noto anche come cup of grandfather or cremina), to be served at the end of a meal, or instead of ice cream during hot summer afternoons.Ingredients for 6 cups:
- 3 large eggs (from free-range farms)
- 5 tablespoons of whole brown sugar
- a pinch of baking soda
- 500 ml of vegetable whipping cream
- a glass of coffee
prepare one two cups moka, pour the coffee into a glass and let it cool completely. Then, you break the eggs, carefully dividing the yolks from the whites; put the reds in a tall, narrow container, add the sugar and whisk until the mixture becomes light and fluffy.
Add the glass of cold coffee and mix again with a whisk for 2-3 minutes. Then cover the container and place in the refrigerator.
Separately, always with a whisk, beat the egg whites with the baking soda until the mixture is firm and compact.
Take back the container you put in the fridge and add the whites whipped until stiff. Mix and put in the fridge again for a few minutes.
At this point, all that remains is whip the cream and add it to the mixture, mix well and place the container in the freezer for about 7 hours, stirring the coffee cream every 2 hours, to make it homogeneous.
After 7 hours, take your cremolato from the freezer and serve in bowls!
