We have revisited the classic recipe of panforte according to the criteria of natural pastry. Therefore, among the ingredients you will not find either 00 flour or white sugar. It will be mainly the dried fruit to give taste and sweetness to your homemade panforte.

Here are the ingredients and all the instructions to prepare panforte at home according to our recipe.

Ingredients

225 ml of water
100 grams of spelled flour
100 gr of dried figs
100 gr of raisins (or dried apricots)
100 gr of hazelnuts
100 gr of almonds
4 tablespoons of maple or agave syrup
2 tablespoons of unsweetened cocoa powder
2 tablespoons of whole brown sugar
½ teaspoon of cinnamon
Almond or coconut flour to decorate

Preparation

To start preparing the panforte, pour the dried figs and raisins into a bowl and cover them with water. Let it sit for 30 minutes. Chop 50 g of hazelnuts and 50 g of almonds in a blender until you get a fairly fine flour. You can toast them briefly in a pan before chopping them to accentuate the flavor.

Drain dried figs and raisinsto. Save the soaking water. Coarsely chop the dried figs and the remaining almonds and hazelnuts with a knife. You can also leave some whole to make the panforte more crunchy. Choose organic and fair trade ingredients as much as possible.

Pour 225 ml of water into a pan or saucepan (you can reuse thesoaking water that you had kept aside). Heat it, add the brown sugar and mix well so that it melts. Also add the maple or agave syrup. If you don't have it available, pour a total of 4 tablespoons of whole cane sugar into the water, mix well and let the liquid thicken slightly.



Combine the almonds and hazelnuts that you have transformed into flour, the cinnamon and the cocoa powder in a large bowl, then mix. Also add raisins, dried figs, almonds and chopped hazelnuts. Then pour the liquid part and mix everything with a wooden spoon.

Cover a round tart pan (preferably hinged) with parchment paper, after having moistened the bottom with a few drops of water to make it adhere well. Spread the mixture and level it with a spoon or spatula.

Cook the panforte in a convection oven at 180 ° C for about 20-25 minutes. Remove from the oven and let cool. You can decorate the panforte with pastry wafers (nougat wafers), if you can find them.

Otherwise, complete the recipe by simply sprinkling the panforte with almond flour (you can chop the peeled almonds in the mixer) or coconut flour, using a colander, to replace the icing sugar.
