The preparation of the cauliflower pancakes in batter it is very simple and, to shorten the time, it is possible, for example, to cook the cauliflower even a day in advance and keep it in the refrigerator until it is time to batter it.


  • 1 cauliflower (650 gr)
  • 100 grams of re-milled semolina flour
  • 200 gr of cold water
  • 1 L of sunflower oil

How to prepare cauliflower pancakes in batter: procedure


  • To clean the cauliflower, cut it into florets and rinse it under running water,
  • boil it in boiling salted water (or if you prefer to steam it) and as soon as it is easily pierced with the prongs of a fork, remove it from the water and let it drain.
  • When the cauliflower has cooled down prepare the batter by mixing the flour and water in a large bowl,
  • passare in the batter the florets, taking care to cover them well
  • and fry them in boiling oil until golden brown,
  • cooking when finished, place the cauliflower in batter on kitchen paper to absorb any excess oil,
  • Serve and serve still hot.
