What is carryover pasta

Carryover paste is used to add acidity to a new dough so that it matures more quickly. But you have to be careful to use it in the right way to prevent the acidity from rising too much. In general, 20% can be added during the winter and 10% of the weight of the dough in the summer.

Mistakes not to make

Using carryover yeast without adding more yeast to the new dough is a mistake because it does not always have sufficient leavening power. So it is always better to add more fresh yeast, leaving the carryover yeast the simple task of accelerating the maturation of the dough and adding flavor to everything.

As for its duration, generally if kept at room temperature it can reach 24 hours. Be careful not to use it if more time has passed at room temperature, the excessive levels of acidity reached could compromise the new dough.

If you use carryover yeast or carryover dough it is better to decrease the percentage of salt in the dough, which should be around 1,5%, since the carryover already contains it.

Differences from mother yeast
