    Asparagus is the typical vegetable of these spring months and they are also very good: they are very rich in vitamins (A, C and E); they have a high content of mineral salts (among which it is important to remember chromium, which improves the capacity of insulin, preventing the risk of diabetes); they help the body to purify itself, thanks to the presence of glutathione, and to avert the risk of some cancers.





    Unfortunately, however, these super-vegetables are found in greengrocers for a very short period of time - just a few weeks: this is why many wonder if they can keep the vegetables bought in these days to enjoy their benefits in the coming months. In this article we have told you about some techniques to preserve asparagus, while now we will explain to you like freeze them the right way.

    First of all, to ensure that the vegetables keep their crunchiness and their characteristic flavor unaltered, they must be frozen raw - whether it is green asparagus (the most common variety) or white asparagus. By freezing them raw as soon as they are bought, asparagus can be kept in the freezer for up to nine months, and we can continue to eat them even in summer and in the colder months.

    If we want to freeze the white asparagus, wash them carefully, remove the woody base and peel them, then dry them on absorbent paper sheets. Now we can choose whether to freeze the asparagus still whole or cut them into chunks, so that they are more practical to use for soups: in any case, put the vegetables in a bag suitable for the freezer and seal it well, pressing with your fingers to let out as much air as possible.

    Freeze the green asparagus it is even easier, as these are more tender and do not need to be cleaned first. Also in this case it will be necessary to wash them under running water and dry them well with absorbent paper before placing them in a bag and putting them in the freezer. In any case, we put a label on the bag with the date of freezing.



    When we want to taste our asparagus, all we have to do is take them out of the freezer and dip them in boiling salted water when they are still frozen, without waiting for them to thaw at room temperature. Remember that the cooking time will be slightly shorter than if we cooked them just purchased: 8 or 10 minutes of cooking are enough to keep them crunchy and tasty.
