It is a savory pie typical of Balkan cuisine of which there are numerous variations depending on the traditions of each country, both in terms of the filling and the shape.
We are talking about Burek o Borek, whose common denominator is yufka dough, similar to our phyllo dough, which after cooking is particularly crunchy. If you want, you can prepare it at home or buy it ready-made, divided into sheets, in Turkish shops.

Burek: recipe with spinach
Today we offer you the Burek in a vegetarian version by Turkish Food Travel, stuffed with spinach.
Ingredients
- 4-5 sheets of yufka dough or alternatively sheets of phyllo dough
- Sesame seeds
Stuffed with spinach
- 1 large onion
- 5 spoons of olive oil
- 750 gr. of fresh spinach
- 1 teaspoon salt
- black pepper
- Chili pepper
Salsa
- 1/2 cup of olive oil
- 2 large eggs
- 3/4 of a jar of plain yogurt (jar of about 500 grams)
- 1/2 teaspoon salt
Method
Start with the spinach filling by frying an onion in a pan with a little oil, after having cut it into small pieces.
Coarsely chop the spinach and pour into a pan over medium-high heat. Complete the cooking and season with salt, black pepper and chilli.
Prepare the sauce by pouring half a cup of olive oil into a bowl, then add 2 large eggs, mix the mixture well and also add the white yogurt and half a teaspoon of salt.
Take a sheet of yufka dough (which you can find in ethnic Balkan shops) or alternatively a sheet of phyllo dough and roll it out well. If you use phyllo dough it will probably be rectangular: it doesn't matter, it will simply change the shape of the burek.
Pour a little sauce on the pasta sheet and roll it out well, then add the spinach in the center. Roll the sheet of filo pastry or yufka dough and once you have a strip, roll it up on itself.
Place the roll thus formed (which in the case of rectangular phyllo dough will have a non-circular shape) in the center of a circular or rectangular pot. Prepare more with the remaining sheets and place them around the rolls already placed in the pot.
Once the pot is filled, brush the burek with the remaining sauce, there should be some left over. And if you like, add some sesame seeds too.
Preheat the oven to 200 degrees and put the burek in it, letting it cook for 40 minutes.
