What it takes to make bubble tea at home

Before proceeding with the recipes you need to understand what you will need to make your own bubble tea. 

Here are the necessary ingredients:

  • tapioca pearls: you will need tapioca pearls, also called silly, because obviously you can't make bubble tea without the "bubbles". Tapioca pearls can be purchased online or at any ethnic grocery store.
  • honey: is mixed with cooked pearls to add that sweet syrupy flavor.
  • unsweetened green tea or black tea
  • lemon slices 
  • ice cubes
  • milk or almond milk
  • fresh fruit

Recipes: three variations of tea with bubbles

Making bubble tea at home is very simple. Here is the step by step procedure:

  • in a large saucepan, bring 8 cups of water to a boil over high heat
  • add the tapioca (or boba) pearls and mix gently until they begin to float to the surface
  • lower the heat and cook for another 40 minutes, stirring occasionally
  • remove from heat, cover and let it rest for another 20 minutes
  • drain the pearls and transfer them to a small bowl
  • mix the honey and set aside to rest for 5 minutes.

Now prepare the three variants; then, divide the pearls into three tall glasses and add the other ingredients.

  • For the classic bubble tea add tea (or iced tea), ice and a wedge of lemon.
  • For the bubble tea with milk: Add green or black tea, milk or plant-based alternative and ice.
  • For the fruity bubble tea: Blend fruit, milk, honey and ice until smooth and pour into the glass.

Tips and advice 

For a perfect bubble tea use tapioca pearls within hours of cooking, so that they reach the perfect texture. To preserve cooked pearls, place them in an airtight container at room temperature, and cover them with honey syrup so they don't stick to each other. Even in this case, however, it is advisable to consume them within 4 hours before they start to become too soft; do not store them in the refrigerator as they will harden.
