La barley and radicchio soup, a recipe (vegan) quick and easy to prepare a first dish of the season tasty and complete, suitable for the whole family.



A tasty soup to warm up the cold evenings that accompany us towards the winter, but also suitable to be brought to the office the next day.

  • 250 grams of potatoes
  • 200 gr of golden onion
  • extra virgin olive oil to taste

How to prepare the barley and radicchio soup: procedure

 



  • Pillar the potatoes and onions and cut them into small pieces of equal size,
  • compromising the base of the radicchio, wash it thoroughly and cut it finely,
  • to merge all in a pan with oil and brown just,
  • add even barley,
  • cover up of water and cook,
  • when the barley will be almost cooked regular with salt.
  • Cooking when finished, serve and serve the barley and radicchio soup still hot.
