Aubergine pizzas, the recipe to prepare a tasty vegetarian second course

Eggplant pizzas, prescription to prepare a second summer dish delicious and tasty. Perfect for enticing children to eat vegetables, this vegetarian dish can also be served as cold dish and it is a valid alternative to classic oven preparations.

The aubergines are seasoned with tomato sauce and mozzarella, but you can still modify them according to your personal tastes; you can add, for example, black olives, capers or cook them in the oven with tomato and then add breadcrumbs.

How to prepare aubergine pizzas: procedure


  • To peel the garlic and cut it finely, put it in a pot together with a drizzle of oil, add the puree, a generous handful of oregano and a pinch of salt, pour a little water and cook over high heat until it is done shrink, taking care to mix every now and then.
  • To cut into small pieces the mozzarella and let it drain a little,
  • to wash the aubergines, cut the stalk and cut them into slices about three millimeters thick,
  • arrange them in a pan lined with parchment paper and season with the sauce,
  • bake in a hot oven and bake at 200 ° for about 8/9 minutes,
  • Than we Remove from the oven, add the mozzarella cubes and continue cooking for about ten minutes.
  • Cooking when finished, remove from the oven and let the aubergine pizzas rest for a few minutes before serving,
